1. Look at the appearance and packaging

When buying Enoki Mushroom, first choose Enoki Mushroom with complete packaging and clear origin labels.

If the quality of Enoki Mushroom is not good, moisture and discoloration can be observed on the appearance.

Therefore, you should not buy or eat yellow Enoki Mushroom that have a sour smell after opening, brown or black spots, or silver velutipes that have turned gray or too white and dry.

2. Look at the caps/caps

The caps of Enoki Mushroom should be hemispherical. If the caps are long, it means they are old. The stems are about 15cm long.

If the Enoki Mushroom are too old or left for too long, the caps will crack, indicating that they are no longer fresh.

3. Look at the color

The high-quality Enoki Mushroom of the yellow variety are light yellow or yellow-brown in color, and the stems are generally light on the top and dark on the bottom. The high-quality silver velutipes of the white variety should be white or milky white.

Regardless of the variety, you should choose Enoki Mushroom or silver velutipes with uniform and bright colors, a fresh fragrance, and no odor.

You should also be careful when choosing enoki mushrooms that are uniformly shiny, unnatural, or too bright. They may have been bleached and dehumidified with highly toxic chemicals. The chemical residues in such mushrooms can damage the nervous system, induce allergic diseases, and even cause cancer.
